Looking for a stylish new spot in the city to entertain clients or catch up with friends? Newly opened in Chelsea, New York, Seirēn celebrates the tradition of conservas — premium jarred and tinned seafood that are cornerstones of coastal tavern culture in Spain and Portugal. Conceived by Nicholas Semkiw and Elvis Rosario of SRV Hospitality with partner Kevin Maribao, Seirēn features menus developed by Executive Chef Max Centauro.
Chef Centauro builds on classic conservas preparations, presenting them alongside toasted sourdough, seaweed butter and bright pickled vegetables. Highlights include a fire-grilled, wood-smoked Gueyu Mar chargrilled albacore pâté; Lulina cockles preserved in brine; and La Curiosa small sardines in chili olive oil accented by high-quality olive oil, lemon and a touch of truffle oil.

“In Spain and Portugal, conservas bars are about more than just tinned seafood — they embody a way of life centered on connection, craft and slowing down,” said Semkiw. “That philosophy inspired us. Seirēn is our tribute to that coastal simplicity, translated for New York.”
The menu extends beyond conservas. Guests can choose from an oyster selection that rotates daily with five to six varieties, or opt for the Three-Tier Caviar Selection featuring Siberian sturgeon, Kaluga hybrid and oscietra. Small plates and tapas include stuffed Piquillo peppers with crab, mini lobster brioche, classic pan con tomate and Jamón Ibérico de Bellota.
The bar emphasizes refined mixology, employing rare botanicals and coastal aromatics to craft distinctive cocktails. Suggested pairings include the signature Drunken Sailor Seirēn Song and the Shore Critter, a creamy take on Caipirinha made with cachaça, lime, lime zest, coconut milk and condensed milk sweetened to balance. A curated list of vermouths from Spain, Italy and France is available by the bottle or glass for leisurely sipping.
Designed to evoke the Mediterranean at dusk, Seirēn was created by S&S Studio and seats 40 guests. The interior palette draws on sea and shore tones, anchored by a striking 10-seat marble bar and tufted leather banquettes. A mirrored wooden arc behind the bar, inspired by a maritime compass, creates a focal point that balances warmth and nautical character. Looking ahead to spring, Seirēn will introduce Song, a hidden bar tucked beneath the cocktail lounge with access through a discreet entrance.
